Tom Shellhammer
Nor'Wester Professor of Fermentation Science at Oregon State University
Tom Shellhammer is the Nor'Wester Endowed Professor of Fermentation Science in the Department of Food Science and Technology at Oregon State University. He is an internationally recognized expert in hops chemistry, focusing on the contribution of hops to beer flavor, foam, and physical and flavor stability.123 His research includes studying specific hop oil components and their contributions to hoppy aroma and flavor in beer.1
Dr. Shellhammer has a distinguished academic career, having conducted research and taught brewing science at the Technical University of Berlin as a Fulbright Scholar and Alexander von Humboldt Fellow during the 2008-2009 academic year. He also serves on the Board of Examiners for the Institute of Brewing and Distilling in London, England, and is a Fellow of both the Institute of Food Technologists and the Institute of Brewing and Distilling.1
