Akna Marquez
Akna Márquez is an architect and ecodesigner who worked as a Project Manager for UDON Noodle Bar & Restaurant from November 2018 to June 2021.2 Her role involved developing interior design projects for the hospitality industry, including planning and controlling deadlines, costs, scope, and quality of subcontracted services.2 She focused on selecting materials and finishes with sustainability goals, designing plans, creating 3D visualizations, and producing technical specifications manuals.2
Márquez was part of the project team that developed a new brand image for UDON Asian Food, a restaurant chain with more than 60 franchises across Spain and Portugal.1 Her specific role in this rebranding project emphasized the selection of new materials based on sustainability, health, and economic criteria.1 She also redesigned construction details to enhance flexibility, reuse, and maintenance of finishes and furniture, aiming to reduce costs and minimize the environmental impact of construction works.1
