- Double-treat the customers with both hefty sample slices and genuine gratitude and attention because each made a special trip instead of buying bread elsewhere. • Know where to go for answers to "bread enthusiast" questions (nutritional information, daily menu, locations, et al.)—and don't feel the need to memorize the answers. • Attain State of Illinois-approved Food Handler certification. • Measure the bread (by weight and temperature), then record in case the baker is required to do "crazy bread math." Be scared of the phrase "crazy bread math." Punch the bread six times so it deflates! Determine the dough to be "Perfect-with-a-capital-P." Knead the bread. • Call and respond to ensure store-wide communication-of-process ("first pan" or "last loaf" or "hot bread")! • Determine "eh, not as good as the Cinnamon Muffins" pretty much every time a new bread comes up for tasting (notable exception: Apple Pie Bread... mmmm). • Wash hands; a lot. • Bag the bread. • Re-learn how to "properly" mop, as a now-recovering "crazy mopper."- "Ask instead of making stuff up"—no room for improvisation, here. • Learn to finish what one starts, especially special projects. • Package grab-and-go product: Gonzo [sp?] (is that a verb?) the plastic baggies of treats for the lobby. • Make the coffee. • Learn the cost of a vat of honey. • Be reassured, because manual slicing and bagging bread requires two people, even for the seasoned pros that I work with. • Learn to use, clean, and appreciate  new and exciting equipment such as a bread divider, bun press, kneading table, and sheeter. • Pull bread forward and evenly distribute across the shelving, because "empty spaces don't pay the bills!" • Learn via a neat "practicum"-based learn-by-doing system. • Turn on the behind-the-counter fan as soon as the first loaves of the day come out.With all this to do, you could call me a "professional loafer," yet—please realize—that this "loafing" is work!
