Design dishes and prepare seasonal ingredients in spice route inspired cuisine utilizing Indian and Middle Eastern ingredients. Design quarterly seasonal menu changes, create and prepare daily soup, appetizers, entrée specials. Break down all proteins including daily fish, braises, side dishes, curries, spice blends, bread dough, desserts including cakes, tarts, ice creams & cookies. Place all vendor orders, maintain inventory rotation, equipment maintenance and aid with special event coordination.
