During his career, Paul held a number of notable positions, including Owner/Operator of Hearth Restaurant, Beverage & Service Director at Gramercy Tavern, Manager at Judson Grill and Remi Restaurant, and Owner/Manager of La Scala Ristorante. Currently, he is the General & Manager at Terroir, a chain of wine bars located in New York City.
